Made quickly with a mini waffle maker, chaffles have been all the rage for a while now. I stumbled upon this recipe purely by accident, but am so delighted with how they turned out! What You Need To make Extra Cripsy Chaffles
- Dash mini waffle maker or something similar
- Egg white
- Mozzarella cheese
- Super fine almond flour
- that’s it!
How to Make A Chaffle
- Take one egg white (from a large or extra large egg) and froth it with a fork. Basically whisk the heck out of it until it is quite frothy.
- Add the almond powder and mozzarella cheese.
- A bit of cooking spray on the Dash waffle maker will help it release or trust in the chaffle gods and add half the mixture to the chaffle maker.
- Close the lid and cook it until it is golden brown. Repeat!
What Makes this Crispy Keto Chaffle Recipe So Special?
There are a couple of things going on that makes this chaffle a bit different from the millions other chaffle recipes.
- The egg white acts as a binder for the cheese, holding the cheese together so it can get nice and crispy.
- The almond powder, what little there is of it, gives the chaffle a bit more substance.
- Mozzarella is the perfect cheese for this. It has a high enough fat content that it’ll get golden brown, but it still holds together nicely.

Chef Jenn’s Tips To Make The Best Crispy Keto Chaffle REcipe
- Make sure you get the egg good and frothy. This is the only thing holding the cheese together so whisk it really well.
- Use super-fine ground almond flour so you don’t have any gritty almond texture.
- Cook the chaffle until it wants to easily release. Use a bit of cooking spray on the chaffle maker if yours are prone to sticking.
- Let the chaffle cool for a minute or three before eating but don’t stack them up or the humidity will sog them.
How To Serve
Chaffles make excellent chaffle sandwiches. Use all your favorite sandwich ingredients to make an awesome chaffwich like this French Dip, Cubano Chaffwich, or just spread them with keto mayo and top with your favorite sliced meats.
Or, use them in place of bread in an Egg-in-a-Hole, eat them like you would a waffle with butter and sugar-free syrup, or just nibble on them as a snack.
I also love serving chaffles alongside a hearty beefy vegetable soup, with a good casserole to mop up all the sauce, or with a bit of garlic butter on top they’re the perfect match for an Italian sausage dish.
Can I freeze keto chaffles?
Absolutely – they freeze like a dream!
To freeze them, just pack them loosely into a freezer-safe zipper-top bag. Freeze them for up to three months.
To thaw, simply pop them into a toaster or toaster oven for a few minutes to crisp up again.

- 1 egg white
- 1/2 cup mozzarella cheese shredded
- 2 tbsp almond flour superfine grind
Instructions
Whip the egg white with a fork or whisk until it is frothy and light.
Add the almond flour and mozzarella cheese. Mix well.
Add half the mixture to the preheated chaffle maker. Cook according to manufacturers directions or until the chaffle is golden brown and releases easily.
Repeat with the remaining batter and enjoy!
