Peach Cinnamon Oatmeal Cheesecake Bars

There are few things I love more than the perfect mix of flavors and textures. One of the great things about these bars is that they combine cinnamon and peaches, which I love, and cheesecake and cookie, which I also love. The smooth cheesecake paired with the chewy cookie makes my mouth happy.

Plus, they’re easy to make. You get cookies and cheesecake without rolling a bunch of balls of cookie dough or baking a cheesecake in a water bath – win!

How to Make The Best Cheesecake Bars

To make them, you’ll make the cookie dough and cheesecake separately with a mixer. A little more than half of the cookie dough gets pressed into the bottom of a 9 inch sure pan. I usually line my pan with some aluminum foil or parchment paper, so that they’re easier to remove from the pan. Add the peaches on top of the cookie dough in an even layer. I used fresh peaches, but if they aren’t in season and you have a craving, feel free to use canned peaches.

Cover the peaches with the cheesecake filling, then sprinkle the remaining cookie dough over the top. I like to break the cookie dough into smaller pieces and crumble it over the top to get an even layer.

Once baked, let them cool completely in the fridge and firm up. Slice them and you have are ready to go! If you love cinnamon and peaches, these are perfect! SO good! Feel free to share – or eat the whole pan yourself. I won’t judge. 🙂

Ingredients

COOKIE BASE

  • 3/4 cup (168g) butter
  • 3/4 cup (150g) light brown sugar
  • 1/4 cup (52g) sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 3/4 cup (228g) flour
  • 2 tsp ground cinnamon
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 2 1/4 cups (207g) Quick 1 Minute Old Fashioned Oats

CHEESECAKE FILLING

  • 8 oz (226g) cream cheese
  • 1/4 cup (52g) sugar
  • 1/4 cup (50g) brown sugar
  • 1 tsp ground cinnamon
  • 1 egg
  • 34 peaches, peeled and sliced

Instructions

1. Preheat oven to 350°F (176°C) and line a 9 inch square baking pan with aluminum foil.
2. Cream butter and sugars together until light and fluffy, about 3-4 minutes.
3. Add egg and vanilla extract and mix until well combined.
4. Combine flour, cinnamon, cornstarch and baking soda in a medium sized bowl.
5. Slowly add the flour mixture to butter mixture and mix until well combined.
6. Stir in the old fashioned oats. The dough will be thick. Set aside.
7. To make the cheesecake filling, beat the cream cheese, sugars and cinnamon together until smooth.
8. Add the egg and mix until well combined.
9. Press just over half of the cookie dough into the bottom of the pan.
10. Add a layer of slices peaches on top of the cookie dough
11. Spread the cheesecake mixture evenly over the peaches.
12. Crumble the remaining cookie dough on top of the cheesecake.
13. Bake for 29-32 minutes. Edges should be lightly browned and center may still be a bit jiggly but will firm as it cools.
14. Allow to cool completely in refrigerator before slicing. Store in covered container in refrigerator.
